The final artisanal touch: why we wash our black truffles one by one
In a world where technology continues to advance to make processes more efficient, there are still gestures that cannot be replaced. Gestures that reflect respect, knowledge, and a particular way of understanding the product. At Xporum, we believe that the quality of a black truffle does not end at the moment of harvest. Every step that follows becomes part of its story.
The black truffle Tuber Melanosporum is born from the earth, in harmony with the Mediterranean environment that surrounds it. That is why treating it with the same care with which it has grown is an essential part of our philosophy.
For generations, black truffle harvesting has been carried out using traditional methods. The knowledge of the truffle grower, the observation of the land, and the work alongside trained dogs have been, and continue to be, fundamental elements in finding this hidden treasure beneath the soil. A relationship between nature and experience that forms part of the identity of truffle cultivation.
Today, technology offers new tools that can help improve certain searching and harvesting processes. Analysis systems, sensors, and new exploration techniques are opening the way towards a more efficient approach to truffle cultivation. However, there are moments when human experience remains irreplaceable.
One of them is the washing of the black truffle.
One by one: the value of taking the time
At Xporum, we do not see washing as a simple cleaning process. It is the moment when we establish one final connection with each truffle before it reaches the consumer.
We wash every piece individually because every truffle is unique. Its shape, texture, small imperfections, and condition require personalised attention that an automated production process can hardly provide.
This handcrafted work allows us to carefully inspect each truffle, preserve its natural characteristics, and ensure that it arrives with all the essence that makes it special.
Because the exclusivity of a black truffle is not only found in its aroma or its origin. It is also found in the way it is cared for.
Maintaining artisanal processes does not mean looking back at the past, but rather recognising the value of what still makes sense today. Truffle cultivation traditions represent knowledge built over generations, a way of working connected to the rhythms of nature and based on respect for the environment.
In our case, hand-washing is part of that vision: a more conscious approach to truffle cultivation, where quality does not depend solely on the technology available, but also on the dedication invested in every detail.
The Mediterranean environment constantly reminds us of the importance of patience. The truffle needs time to grow, it needs balance, and it needs a carefully preserved ecosystem. We believe that this same respect should accompany every step of its journey until it reaches the table.
