The black winter truffle, scientifically known as Tuber melanosporum, is one of the most prized products in world gastronomy. However, its growing fame has also brought confusion and fraud. As a result, some companies have begun selling “similar” truffles marketed as authentic Melanosporum. One of the first aspects to pay attention to is its veins. These are not only aesthetic: they indicate proper ripening of the truffle and are associated with the presence of spores, which is where much of its aroma and culinary value reside. The veins of Tuber melanosporum are white or slightly ivory in color. They are fine, highly branched, and evenly distributed throughout the black truffle. Likewise, aroma is a key factor, as it is the true “signature” of a Melanosporum. It is intense and reminiscent of a damp forest, with notes of cocoa, wet earth, nuts, and a subtle hint of sweet garlic. Lower-quality truffles (such as Tuber brumale or the aforementioned Tuber indicum) have a much fainter or even unpleasant smell. In some cases, unethical sellers try to enhance these aromas with oils or artificial essences. Therefore, if the scent seems “too strong” or synthetic, be cautious.
